To keep track of items that are sold at the Stands, you should select certain items as control items and use them to monitor movement into and out of the Stand. For example, if the Stand sells beer in a 24 oz. plastic cup and soft drinks in 12oz., 16 oz., and 24 oz. paper cups, each cup is designated as a control item in the system.
Discounting waste, the beginning inventory, plus the total number of cups transferred to the Stand, compared to the ending inventory would indicate how many cups of either soft drink or beer would have been sold.
To Allocate a Control Item:
From the FOOD-TRAK Control Console, click Database to open the Item Selection window.
Select an item to be used as a control item and click it to open the Item Editor.
Click the Inventory tab. In addition to the list of Assigned Inventory Locations for the item, you can assign the item to any or all of the Stands you have defined by double-clicking the Stand Name on the Possible Inventory Locations list (in the left pane of this tab), thus moving it into the Assigned Locations list.
Next, click one of the assigned Stands in the right pane to activate the Stand Information button on the lower left side of the tab, and then click the Stand Information button.
On the Stand Info window that appears, you have the choice of configuring the control item as either cash-oriented or product-oriented.
Specify a Selling Price allocates a dollar amount to each control item that is used (disregarding any reported waste). If , for example, "Cup, 24oz" is used as a control item with an $8.00 selling price allocated to it, and the Stand’s inventory was depleted by 200 such cups during an evening (with no waste or transfer activity), the Stand would owe $1600.00. This option is useful if several products were sold using the same control item at a single or averaged price that will not change often.
Use the selling price of a selected Product assigns a single product to the control item. You can assign only one product to each control item. If, for example you assign the product Chicago Style Frank to the control item "hot dog," the control item is then linked to the Chicago Style Frank product. If the price of the product changes, it is automatically updated at each Stand. You can also assign items based on a POS or Bar Code.
Click OK when finished.
While still on the Item Editor’s Inventory tab, set the Minimum and Maximum Par Levels for each Stand Location. The Stand Sheet module has Automatic Requisitioning capability, which is activated by inventory-specific par levels. By establishing par levels for each Stand, the system is able to automatically generate requisitions based on current on-hand amounts.
